Garlic Chicken and Avocado Salad

I will tell you what’s amazing. At one side of the world, YOU, yes YOU! Could have struggled to wake up this morning because it is still dark. It is so cold you wish you didn’t have to get out of bed. When you come home from work, you long for something comforting and a hot bowl of soup.. and a warm dessert… and a hot cup of tea afterwards.
BUT on my side of the world, aka Australia… when I get up in the morning, the sun’s already been up a few hours. Well, sort of. I have already kicked my blanket out of the way because it’s hot. When I come home, I try not to use the stove as much, as I get all sweaty from the heat it generates. Yes, summer is here in Australia.
Tis the season to eat salads.

Look, I don’t mind salads. But it has to be fairly fulfilling. I can’t just go from eating delicious wholesome meals to a plain leafy salad. It needs to have lots of color, lots of AMAZING flavor and textures. Which is why I’m sharing this recipe today, just a little something I’ve put together based on the ingredients I had in my pantry. Enjoy!


Ingredients:

4 chicken thigh fillets
2 tsp minced garlic
Salt and pepper
Olive oil
Rockets leaves
Cherry tomatoes
Fresh bean shoots
1 green capsicum
1 can whole champignons, sliced in half
100g almond flakes, lightly toasted
2 avocados, chopped
2 tbsp Italian salad dressing
2 tbsp aioli (garlic mayonnaise)
1 tsp curry powder

Method:

In a frying pan, heat olive oil. Rub chicken fillets with garlic and lightly season with salt and pepper. Cook chicken in pan for approx. 5 – 7 minutes on each side. Set aside to cool before slicing chicken.
In a salad bowl, mix rockets, tomatoes, bean shoots, capsicum, champignons and Italian dressing.
Mix curry powder with aioli, gently mix with chopped avocado.

To serve, make a bed of salad leaves mixture, top with avocado mixture, followed by warm slices of chicken and garnish with fresh coriander leaves (optional) and toasted almonds.

  2. I know exactly what you mean Kimberley. We love salad but there's got to be something more to it. No point still being hungry when you've eaten it all. This looks great.It's a strange world really isn't it? We're just heading towards the colder months and starting to prepare soups and other comfort foods.

  5. That looks so delicious! I love to look through the pantry and fridge and throw everything I possibly can into my salad to make it more filling. Will need to keep this flavor combination in mind for four months from now when the spring weather comes back!

  6. Your salad looks great, and I bet my husband would really enjoy it. Since I don't eat meat I bet it would be good with a substitute for the chicken. Looks like you have great ingredients stocked up at your place.

  7. Despite the sun being up early, I am still earlier than the sun. This morning, the moon was so huge! I feel that the fact that summer is coming screws up my body clock. Like, I tend to go to bed when the sun just sets (Probably around 8.45pm) and wake up right before the sun rises (Around 4.45am). And no alarm clocks involved. 0_0

  8. This looks great! And can't explain to you how great it is to have some extra ideas about what to do with chicken. I am the type of woman who doesn't mind eating lettuce and chicken every day, but my husband appreciates variety, so this salad would be a great way to keep everyone happy 🙂

  10. nom nom nom! Avocados in salad, they are so creamy and rich sometimes i even hate to add dressing so I love how you mixed the avocados with the aioli. YUM!I am so jealous of your summer when it is dreary and chilly here!

  13. Love salad season! Especially when the avocados are cheap and plentiful. Having said that, I was one of those people the other day gently and sneakily squeezing my way through everyy avo in the shop… all rock hard! Disappointment! Anyway, love the look of this salad 🙂

  14. Ahhhh… I'm envious of your summer! If I had my way I'd be traveling around looking for the Endless Summer! Headed to Hawaii in a few weeks for a warm up (but I can't really complain with my wonderful San Diego weather!). The salad looks perfect, all my favorites. Luckily we are still grilling here (but in the dark now…) and loving our salads. Thanks for this one!
