Vietnamese Rice Noodle Salad

On really hot summer nights, I love having a delicious cold salad for dinner instead of a hot and heavy meal. It’s also good to not have to slave away in the kitchen and sweat even more from cooking using the hot stove. This recipe is an excellent Asian salad dish that is refreshing, light yet fulfilling. The flavours pack a good punch too. I always tend to make extra sauce and a huge batch each time I make this salad – as it stores well in the fridge for lunch the next day. I hope you enjoy this recipe … Continue reading Vietnamese Rice Noodle Salad

Smoked Salmon Appetizers and Salad

Earlier this week, while shopping for some smoked salmon so we can have a healthy salad for dinner – I was stuck in a serious dilemma at the supermarket for a good 3 minutes! You see, I only needed 200g of smoked salmon to make my salad. But, I’ve worked it out that if I buy 200g only, the price per kg was $60! On the other hand, buying a whole 1kg packet of smoked salmon was only $30/kg. There is another twist – the 1kg bag was on special because it has already been thawed and therefore I could not … Continue reading Smoked Salmon Appetizers and Salad

Mexican Eggs with Chorizo and Kumara Recipe

Recipe from Australian Good Food Magazine November 2010 I decided to try this recipe because 1) the presentation of the dish was so colorful and looked yummy as soon as I saw it 2) the list of ingredients were surprisingly short! 3) it was classified as a Mexican dish, something I rarely cook in my kitchen but absolutely LOVE flavors of Mexican food! 4) it looked like a simple enough dish to cook, but looked impressive enough to serve guests – and if tastes just as good as it looks, it will definitely go in my collection of must-have recipes. … Continue reading Mexican Eggs with Chorizo and Kumara Recipe

Egg, Bacon & Onion Quiche Recipe

Call it Egg and Bacon Quiche, or Quiche Lorraine, or just a quiche… I have never made quiches before, so I thought it would be a nice change to have something different. In most Aussie households, the quiche is a very common dish. Some people can make quiches with their eyes closed!! But you know what I don’t like about traditional quiches? There’s always barely enough of that soft, eggy filling to keep me happy! So tonight I got a little bit generous and made a “tall” quiche so I will have an abundance of filling. The downside to that, … Continue reading Egg, Bacon & Onion Quiche Recipe
