Easy Spanakopita Recipe

In order to cook one of my previous blog posts Pumpkin and Spinach Casserole, I bought some spinach from CostCo. To those of you who may not know, if you buy spinach from CostCo, you end up buying 1kg worth of spinach. That is A LOT of spinach. I don’t normally cook vegetarian dishes, so I had no idea what to do with that much spinach! So I sent a message to my sister in law who IS a vegetarian and she recommended this Spanakopita recipe. Pumpkin and Spinach Casserole

Well, believe it or not this is my first time ever attempt in cooking a 100% vegetarian casserole! I figured I should have something vegetarian stocked up in my freezer for when the baby arrives, just to add to the variety. Again, I googled several recipes and came up with this one. This whole No Carb Diet thing is really challenging me to become more and more creative with my dishes, and to also explore alternatives to the norm.  This recipe can of course be healthier (hehe) … Continue reading No Carb Recipe: Creamy Mashed Cauliflower

Asian Risotto Recipe

I believe I just made something up – but my palate loves it! And my hubby goes for seconds on this one, so it’s worthwhile sharing. It was another one of those nights when I only had 30 minutes to cook dinner, and challenging myself to use whatever ingredients available in the pantry / fridge. The result, is a wholesome risotto-ey dish which is not quite the traditional risotto most Australians are familiar with… so I’ve named it “Asian Risotto” lol, it’s like my own Invention Test in Kimba’s Kitchen! I really hope you guys like it, it’s very simple … Continue reading Asian Risotto Recipe
