Spaghetti Carbonara Recipe

Serves 4

Undoubtedly a classic, simple pasta dish – Spaghetti Carbonara is one of the simplest yet one could possibly argue, the tastiest way to eat spaghetti. Its creamy texture and cheesy taste creates occasional craving in our household, and tonight was one of those nights. I just desperately wanted lots of cheese and spaghetti! And cooking this dish requires almost no effort, and creates almost no mess – I love it 🙂
Ingredients:
400g dried spaghetti, cooked
200g bacon / ham, sliced
1 cup thickened cream
120g Parmesan cheese, finely grated
2 eggs
Fresh parsley to serve
Method:
Pan fry the bacon for approx. 5 minutes until cooked tender and just browning. Remove from the frying pan and set aside.
In a bowl, lightly whisk the eggs before adding cream and 3/4 of the cheese. Add the cooked spaghetti to the pan on low heat, and toss with the cream mixture for 1 minute. Add the cooked bacon and toss for another minute.

Serve hot. Sprinkle some of the remaining parmesan cheese on top with some finely chopped parsley.
