Easy Chicken Mignon Recipe

It sure feels good to be back in the kitchen! I’m sure you’re all familiar with the “Fillet Mignon” but I’ve decided that chicken goes just as good with bacon wrapped all around it! Here is a really simple recipe for your weeknight dinner meal, very easy to prepare and almost hassle free!
Ingredients:
2 chicken thigh fillets
2 slices of middle bacon
1/2 red capsicum, chopped
1/2 green capsicum, chopped
1/2 cup shredded cheese
1/2 cup bbq sauce

Method:
Marinate the chicken thigh fillets in bbq sauce, preferably overnight. The next day, compact the fillets as much as you can into a round-shaped fillet, wrap the bacon around it and secure with two toothpicks. Sprinkle shredded cheese, red and green capsicum on top. Bake in the oven for approx. 35-40 minutes at preheated 180 degrees. Serve with green salad and garlic bread.

  2. You hit my soft spot… mmmm bacon! I think bacon makes everything better, except for some cookies I've sampled recently. My guy isn't much of a meat eater. He tolerates chicken but loves bacon so I'm sure this would go over well. I'm happy you are back in the kitchen!!!

  3. Since I have discovered Trader Joe's uncured turkey bacon, which my husband loves, I can make these wonderful fillets wrapped in bacon, marinated in BBQ sauce. We eat a lot of chicken, so here's another wonderful recipe.
