That was just one of the many ways you can use leftover roast meat. Other options would be meat for sandwiches or wraps or kebabs, a hearty stew / soup and of course, eat it the way you had it the night before! Served with gravy, roast potatoes and steamed veggies!

My husband loves lamb and I've actually got a boneless leg of lamb in the fridge right now, waiting to be used. There are just two of us and a toddler, so I often butcher the leg into smaller pieces and roast or grill part of it, and then either cut it in chunks for brochettes or stew, or grind it up. That gives us at least three totally distinct meals without worrying about a big pile of leftover lamb, and the smaller portions freeze nicely too.

I made this today and we all loved it. I used a veggie pasta in place of the elbow and added a small breadcrumb layer on top under the cheese and it was awsome. I will use this for other meat left overs as well.
