A few days ago, Jonathan from MasterChef Australia Season 2 put up a chicken dish inspired by Jamie Oliver during his elimination challenge in MasterChef All Stars. It looked really simple and yummy. I didn’t even bother looking up the recipe because I had the ingredients and method in mind already just by watching Jonathan cook it on TV and him talking about the ingredients.
It is such a simple way of cooking chicken yet can be elegantly served to impress. Jamie Oliver is a true genius to think of simple ways to cook yummy food! Again, I must stress that this is NOT Jamie Oliver’s exact recipe, this is not even Jonathan’s recipe. This is basically my interpretation of the dish and to me, it tasted absolutely amazing! I have a feeling this will now be a regular dish at home, especially considering how simple it was to prepare which is perfect for a quick and easy, yummy dinner. I just served the chicken with some roasted potatoes and steamed veggies. Love it!
4 chicken chops
2 garlic cloves, crushed
A handful of fresh mint
2 tbsp hot chilli paste
1 tbsp lemon juice
Salt and pepper to taste
Vegetable oil for grilling / frying
Heat vegetable oil in a frypan. Rub crushed garlic, salt and pepper onto chicken chops and pan fry them skin down first. Flip them over when skin is brown and crispy. Cook until chicken is cooked through, chicken will feel firm and no longer “bounce back” when cooked through.
To prepare the board, finely chop fresh mint leaves. Add chilli paste, lemon juice and a generous amount of olive oil. Spread the mixture evenly across the chopping board.
Place cooked chicken chop on the dressed board and coat evenly. Slice chicken and serve.
