Lazy Sunday Series: Crispy Tortilla with Ham, Spinach, Chilli and Fried Egg by Curtis Stone

Part 3: My Take on a Celebrity Chef’s Breakfast Recipe

When faced with a challenge of re-creating a recipe by a celebrity chef, the natural tendency is to cringe and go “ooh, that sounds too complicated”. Surprisingly, not all recipes by these “celebrity chefs” are impossible to re-create! As a matter of fact, chefs like Jamie Oliver and Curtis Stone are all about making their food easy for everyday people like you and me to make at home, and of course they are delicious.

This particular recipe from Curtis Stone (he is my favorite celebrity chef, also a hunk, read all about him here) is very simple and only requires a handful of ingredients that are easy to source. Nothing too complicated or overly fancy. I thought it would be perfect for me to try making this breakfast dish for hubby on Father’s Day this morning.

I stayed fairly true to the recipe, except I added some hot salami and used grated cheese instead of the block of cheddar. I also completely used only the oven to heat up the tortillas and cook everything else as if I was making a mini pizza. The result: AWESOME! It was a bit of a “manly” dish, with the saltiness of the ham and heat from the salami. The fried egg was perfect to add the “gooey” factor to the dish. It was also easier to eat the whole thing by hand, by folding the tortilla and just creating a gooey but delicious mess!

The most perfect coffee art I could imagine would be amazing in its simplicity. My other half had a barista make me a coffee and he asked the barista to put 15 on it. The 15 was located inside a heart with a Cupid arrow through it. The 15 symbolised the date of our anniversary and the day each month that we stop to remember how much we mean to each other. I will never forget the symbolic nature of such a simple feature.

My first memory is when I was 5 and gagging on my mums coffee because it was so bitter. When I started drinking coffee I felt like such a grown up.

I was a child in the late 1940's, almost everyone drank tea, which I disliked. My favorite aunt drank 'coffee essence'mixed with condensed milk and boiling water I loved it, more for the chance to be different and the exotic smell. Haven't seen it for years. I still love coffee, but, now only drink 'the real thing' made with freshly ground beans

i have a couple of Curtis Stone recipes i really like. and i love breakfast recipes!I remember I use to sip my mums coffee (instant of course – i'm a country girl) as a kid and not like it. But oneday when I was at school (primary – i started young!) one of the teachers made a cup of coffee at recess. I can't really remember why I tried his coffee (it was a very small country school) but I do remember I liked it! and even more strangely I remember him (Mr Doyle) telling me that it was nice because he added the milk before he added the hot water. And you know, if for whatever reason I am desperate enough to drink an instant coffee, I always dissolve the coffee in the milk first!

My first memory is of an expresso coffee in a little cup my mum left unattended..my childish urge to quickly take a sip while alone..with the result?! Coffee rushing out of my nose as i sucked in a gulp of air! That five year old learnt that coffee was a pleasure i was happy to reaquaint with when i was older! Boy..i'm fifty and my friendship with coffee is a daily affair and no nose involvement at all!

As a child I tasted Camp coffee (v sweet with cold milk) and then as a young adult it was instant all the way. Thank goodness I discovered REAL coffee.

I honestly can't remember the first time i tried coffee… my mum and dad always drank that horrible instant stuff in the tin (Caro??) so when i drank my Mum or Dads coffee it would not have been a time to remember! I do remember though when I started working at 14 that we used to go into the tearoom on the later shifts and have a cup of instant Nescafe to get you through the rest of your shift (not that I have much of an appreciation for the instant stuff anymore). It wasn't that long ago. My second child crying non stop and I was struggling to stay awake overnight feeding, consoliding and doing the baby night feeding stuff. I finally god him to sleep and my other son woke up I took my firs cuppa then as if I hadn't I would have been a right off for the rest of the day. I have never looked back and turn to coffee when ever I need a pick me uparballantyne@dodo.com.au

i can remember making my first coffee when I was on work experience as a hairdresser, I was so embarrassed I had to ask how to make it (…and it was instant) so I drank a cuppa I had made on my break and felt now I was in the real world!

I was 17 and my dear mother was concerned that I wouldn't make it through the day after staying up all night finishing a Yr 12 assessment. She made me a coffee to pep me up, probably Nescafe instant. It was the most disgusting thing I had tasted but I eagerly drank it to show how “grown-up” I was. My first few espressos at uni took a bit of getting used to, as, well, let's face it, it really is an acquired taste. These days I love any good coffee, usually a well made espresso, but some instant coffees I find quite acceptable.

Some of the best coffees I've had were made on a friend's stove-top; stirred frantically by hand with a very 'loved' coffee pot. Only one at a time could be made so you had to wait quite a while for seconds! It was definitely worth it!

The bitter taste of cheap coffee filled my mouth and I quickly scooped sugar in to sweeten the milky drink. That was 15 years ago now and my taste has developed since then! I now adore my morning coffee and I'm only truly satisfied when I have a freshly brewed espresso!
