Week 1: Sticky Kicking Chicken with Watermelon Radish Salad & Crunchy Noodles

This blog post is part of my Jamie Oliver’s 15-Minutes, 15 Recipes, 15-Week Challenge. To kick off my Jamie Oliver challenge, I’ve decided to try a seemingly simple dish which required very common ingredients which I mostly already have in my pantry. The recipe itself looked simple enough, consisting of three main components – the meat, the salad and the dressing. I made sure I read the recipe over and over again many times to familiarize myself with the processes to make sure I work as quickly as possible. Not surprisingly, it did not take me 15 minutes to come … Continue reading Week 1: Sticky Kicking Chicken with Watermelon Radish Salad & Crunchy Noodles

Vietnamese Rice Noodle Salad

On really hot summer nights, I love having a delicious cold salad for dinner instead of a hot and heavy meal. It’s also good to not have to slave away in the kitchen and sweat even more from cooking using the hot stove. This recipe is an excellent Asian salad dish that is refreshing, light yet fulfilling. The flavours pack a good punch too. I always tend to make extra sauce and a huge batch each time I make this salad – as it stores well in the fridge for lunch the next day. I hope you enjoy this recipe … Continue reading Vietnamese Rice Noodle Salad

Grilled Lamb in a Hot / Cold Salad and Lunch Wrap

I have been very lazy with my cooking lately – mostly because I haven’t done any grocery shopping for two weeks until yesterday, and also because work and life has been hectic, and also we’ve gone to a few family BBQs therefore I didn’t have to cook, and when I did have to cook, I cooked dishes I have already blogged about! I am also currently working on a blog post that is very different to what I usually do. It is a lot more well thought of, and requires RESEARCH! Now that’s new… hehe. Unfortunately I am still not … Continue reading Grilled Lamb in a Hot / Cold Salad and Lunch Wrap

Epic Meal Time Inspired Feast

Have you seen the Epic Meal Time YouTube Channel? I’ve only been introduced to this by one of hubby’s friends recently – when a bunch of guys came over to help hubby with some work in our backyard, they specifically asked if I could prepare an “Epic Meal Time” dinner feast for them once they’ve finished working hard. I had no idea what he was talking about, but I said “ok” anyway. He gave me two clues “meat” and “quantity”.. I still went “OK” without doing my research on the internet, lol. So, just based on what I was told … Continue reading Epic Meal Time Inspired Feast

Moroccan Chicken Kebabs and Pasta Salad

Well, say goodbye to 2010 and hello to 2011… or to be precise, today is actually 1/1/11 which is kinda cool. I hope everyone had a lovely New Year’s Eve celebration whether you decided to party it up or just enjoy quiet company at home. Hubby and I enjoyed a lovely quiet BBQ at a friend’s place. There were just 6 of us but we really enjoyed the great company and great food and great cocktails and the boys started off the New Year by enjoying the wonderful outdoor spa but the women aka wives were too tired so we went … Continue reading Moroccan Chicken Kebabs and Pasta Salad

Garlic Chicken and Avocado Salad

I will tell you what’s amazing. At one side of the world, YOU, yes YOU! Could have struggled to wake up this morning because it is still dark. It is so cold you wish you didn’t have to get out of bed. When you come home from work, you long for something comforting and a hot bowl of soup.. and a warm dessert… and a hot cup of tea afterwards. BUT on my side of the world, aka Australia… when I get up in the morning, the sun’s already been up a few hours. Well, sort of. I have already … Continue reading Garlic Chicken and Avocado Salad

Mystery Freezer / Pantry Challenge

Here’s a mouthful: Warm Salt and Pepper Prawn Salad with Tuna, Pasta, Egg and Sweet Corn Mayonnaise topped with Crushed Peanuts Monday nights. You know how it is to come home after a long day at work, and you are most likely still recovering from your “Monday Blues”? Cooking is probably the last thing most of us would want to do. I felt the same way. Came home, and sat on the couch for a good 10 minutes before deciding to get up and make something for dinner. I didn’t plan to cook anything – so I was faced with … Continue reading Mystery Freezer / Pantry Challenge

Thai Beef Salad Recipe

Recipe from: “BBQ Food for Friends” by Jane Lawson and Anessa Broadfoot A friend of ours made this Thai Beef Salad at a recent BBQ gathering last weekend, and I couldn’t help myself – asked for the recipe straight away! It is a simple yet fulfilling dish, not your typical “salad” because there is plenty of wholesome, meaty BEEF goodness and beautiful flavors throughout the salad. Perfect for any barbecues, and I know I’ve been posting lots of “Winter Comfort Food” lately for my Aussie readers, so here’s one for my American / Canadian / International readers 🙂 Ingredients: 80 … Continue reading Thai Beef Salad Recipe
