In order to cook one of my previous blog posts Pumpkin and Spinach Casserole, I bought some spinach from CostCo. To those of you who may not know, if you buy spinach from CostCo, you end up buying 1kg worth of spinach. That is A LOT of spinach. Pumpkin and Spinach Casserole

Well, believe it or not this is my first time ever attempt in cooking a 100% vegetarian casserole! I figured I should have something vegetarian stocked up in my freezer for when the baby arrives, just to add to the variety. Again, I googled several recipes and came up with this one. Week 36: "Final Weeks Are The Toughest"

No kidding. Here I am, having people say to me “not long to go now…” and “hang in there…” and occasionally (though I haven’t really used this phrase very often, yet) I say “get this baby out of me!!” – I plan to save that phrase for when I’m actually overdue, if I actually go overdue.  Baby’s not due until the 21st of December.
