Scallops with Peperonata, Aioli & Pork Crackles

This dish is so easy to make and presents really well. Hubby thought I could easily sell lots of this as an entree at a restaurant, lol. This recipe was inspired by a recipe on taste.com.au but the difference is I made the peperonata instead of purchasing the jar and I topped it up with pork crackles for that extra crunch. Extremely happy with how this turned out.. I really hope you like this as much as I do! Ingredients: 20 scallops without roe 2 tbsp extra virgin olive oil 1 yellow capsicum / peppers, sliced 1 tsp chopped garlic … Continue reading Scallops with Peperonata, Aioli & Pork Crackles

Crispy Roast Pork and Asian Fried Rice Stuffed in Grilled Capsicum

Hands up if you love Crispy Roast Pork! 🙂 I absolutely LOVE Crispy Roast Pork, cannot get enough of crackling. It was divine, and I served it with a simple vegetarian Asian Fried Rice stuffed in an open grilled capsicum. Ingredients: 500g Roast Pork Leg / Belly, skin on, meat only approx. 1 inch thick 1 green capsicum, cut in half, seeds removed 1 cup of rice, cooked 1 cup of sweet corn kernels 1 carrot, diced 2 large cup … Continue reading Crispy Roast Pork and Asian Fried Rice Stuffed in Grilled Capsicum

Chinese Styled Braised Pork Leg with Japanese Tofu

No Carb Diet Recipe Series I suppose by now you’ve noticed that a great non-carb substitute for rice / noodles in any dish is.. TOFU! Smooth tofu in particular is my favorite 🙂 The result of this dish is a super tender, melt in your mouth, fall off the bone pork in a really “sweet” sauce combined with silky smooth tofu. When you eat this dish, combine a bit of pork meat with tofu and the crunchy texture of the freshly chopped spring onions and fried onions with the strong flavors of fresh coriander leaves… HEAVEN! Ingredients: 1 packet Japanese … Continue reading Chinese Styled Braised Pork Leg with Japanese Tofu

Japanese Egg Tofu with Minced Pork Recipe

No Carb Diet Recipe Series Continuing my series of No Carb Recipes, I’d like to feature a very special tofu even the biggest Tofu Hater has the chance of being converted! I am talking about the silky smooth, egg tofu aka Japanese Tofu that has the smoothest, softest texture that is so delicious if cooked correctly… the “Japanese” Egg Tofu! This recipe is very popular in Malaysia, and undoubtedly other Asian countries as well. Served in Chinese restaurants typically as a “hot plate”, I have come up with my own home cook version which turned out pretty good! Give it … Continue reading Japanese Egg Tofu with Minced Pork Recipe

Stirfried Pork Belly with Vegetables

This is a super easy stirfry recipe involving minimal effort and takes less than 30 minutes to prepare and cook. The idea is to have a whole bunch of natural flavors combine together to form this ultimately satisfying stirfry which can be eaten on its own or served with rice on a lazy weeknight. Yes… I think I am getting lazier and lazier. Work (and life) has just been so busy lately that I haven’t had the chance to experiment cooking something new or exciting or complicated. But I am sure there will be some readers out there who would … Continue reading Stirfried Pork Belly with Vegetables

Kikkoman Asian Marinades… Magic Sauce!

In the past week, I have cooked two dishes using the same sauce: Kikkoman Sweet Chilli, Ginger and Soy Marinade and Sauce combined with Melted Butter.  Rainbow Trout in Sweet Chilli, Ginger, Soy and Butter Sauce served with Creamy Mashed Potatoes and Vegetables. The trout has literally been smothered with the sauce, and baked in the oven for 30 minutes at 180C fan-forced, fully wrapped up in foil. The result is this tender, “steamed-effect” fish and its meat was still slightly pink and it was just absolutely divine. Never overcook fish, it’s meant to be enjoyed most when it’s still … Continue reading Kikkoman Asian Marinades… Magic Sauce!

Slow Cooked Roast Pork Loin Recipe

Aah, another beautiful Sunday roast dinner. Sundays are my favorite “cooking day” simply because we are often at home on Sunday night to actually have dinner at home, and I also mostly have the whole afternoon to cook if I needed that time. That’s why a good, slow cooked roast is often on the menu. I already have two recipes I consider as my Sunday Roast favorites: Garlic and Rosemary Slow Cooked Roast Lamb Roasted Chicken Legs with Herb and Breadcrumb Stuffing So I already have lamb and chicken, let’s add some PORK to my collection! I call this a … Continue reading Slow Cooked Roast Pork Loin Recipe

30-Min Meal: BBQ Pork Spareribs & Stirfry Indo Mee Goreng with Veggies

Whenever you watch cooking shows like MasterChef, whenever the contestants are given only ONE HOUR to prepare and cook and plate up a dish, they always freak. It may seem like a lot of time, but do not underestimate the preparation and organisation required to cook a meal within an hour… it’s always going to be tight! Unless you’re cooking 2-minute noodles of course… but even 2-minute noodles take more than 2 minutes sometimes! So tonight, I got home just before 7pm and I really wanted to watch MasterChef, which leaves me with just 30 MINUTES to whip something decent … Continue reading 30-Min Meal: BBQ Pork Spareribs & Stirfry Indo Mee Goreng with Veggies

Simple Ideas for Salads, Marinades & Pasta

This is more of a “random” post with bits and pieces of simple ideas using some of the photos I have in my food archive. Just in case you’re busy cracking your head wondering what’s for lunch / dinner! Idea #1: A colorful mediterranean salad immediately creates a positive appeal to eaters. Therefore, when putting a salad together, think COLORS. This example includes avocados, yellow capsicum, cherry tomatoes, carrots, and mediterranean leaves. You could go a lot further by adding cucumbers, olives, semi dried tomatoes, smoked salmon, go crazy!! The natural flavors of everything put together beats any dressing, so … Continue reading Simple Ideas for Salads, Marinades & Pasta

SIO BI / SIU MAI Recipe (Minced Pork Parcels)

credits to http://2010menu.blogspot.com/ Kimba’s Review: Call it Siu Mai, or Dim Sim, or Dim Sum, I will always call it Sio Bi because that’s what it is where I come from! From the city of Kuching, in the state of Sarawak, in Malaysia… I have always loved my little Sio Bi(s) from the open air markets, hawker stalls and food court. There is something about the authenticity of Kuching Sio Bi, and so far, I have NOT found anything similar or comes even close to what it tastes like in Kuching. Yes, they’re all different in Melbourne and I can’t … Continue reading SIO BI / SIU MAI Recipe (Minced Pork Parcels)
